Here is the sauteed gnocchi dish.
While I love home made gnocchi this is from the package.
I used a about a pound of ground beef. In the ground beef I put a handful of bread crumbs and about 2 tbls of flour. I seasoned to taste with salt pepper garlic and red pepper flakes.
I used olive oil to give the extra oil needed to cook the gnocchi through I put the gnocchi into the ground beef when it was still a little pink so they could both finish cooking around the same time.
I threw in a Shallot near the end and covered everything with some store bought spaghetti sauce.
Here are the sauteed mushrooms. I cooked them in olive oil with salt pepper garlic (to taste) and a single Shallot. Mushrooms cook down a lot so remember an entire container is normally only good for 2-3 people at most
Sauteed gnocchi with ground beef, in a tomato sauce with sauteed (separately) mushrooms.
Healthy and fast lunch. Left over couscous halved grape tomatoes, and one small Shallot, and I used frozen grilled ,chicken but you can always use leftovers. Bring an apple and carrots then you’re set.
Tonight I am making a curry with rice. Tomorrow I am thinking I might make some spaghetti and meat balls or maybe a butternut squash soup. Thoughts?
Finally the roasted red new potatoes. I actually didn’t do these my roommate did, he cut the potatoes into halves or fourths, then he drizzled some olive oil into a gallon zip bag, threw the potatoes in with some fresh Rosemary, salt, pepper, fresh garlic, and again Cayenne (you will notice we use Cayenne a lot it is not necessary unless you like things kind of spicy) I cooked them at the same time as the salmon, same temperature and everything, they took about 25 minutes too cook, I turned them occasionally. If anyone wants to know more about any of these things let me know, I am working on learning how to give better measurements than “I used some….”
I made these Brussels sprouts, using olive oil, salt, pepper, and Cayenne Pepper to pan fry them in. I added some onion (I used a mixture of red onions and red shallots) and some fresh garlic. I then added some of the glaze from the salmon
This is the Glazed salmon I mentioned. Instead of the rice wine vinegar (recipe here: http://www.food.com/recipe/brown-sugar-glazed-salmon-150614) I used half white vinegar and half balsamic vinegar. I also used half brown sugar and half agave nectar. The vinegar was a substitution because I don’t have rice wine vinegar.
